No Bake Banana Split Ice Box Cake....

"You had me at Banana Split!"  my friend said when I told her I was making this - LOL!! - LOVE you Janice!

HAPPY MEMORIAL DAY EVERYONE!!!

First, before I share this delish dessert with you -  I'd like to say  - May God Bless ALL the men and women of our USA Armed Forces who have served, who are serving, as well as the families of those who have made the greatest sacrifice for our FREEDOM!  THANK YOU!

Now, just in time for your Holiday Celebration tomorrow - here is "MY TAKE" on a recipe that I found on Pinterest  ( Please feel free to "Follow Me" there - just search for shercara under pinners! )

I made this for a Scrappy Get-together at my favorite LSS Store this weekend - Scrap-a-Doodle Doo, Ramsey, NJ, and it got RAVE reviews from the ladies!

Banana Split No Bake Cake

Yield: 12 to 16 servings Prep Time: 30 minutes
**SET TIME - 4 hrs or over night


Ingredients:

For the Crust:
2 cups CRUSHED Nabisco Famous Chocolate Wafer Cookies - or graham cracker crumbs -or crushed Vanilla Wafers
½ cup butter, melted
For the Cream Cheese Layer:
12 ounces cream cheese, at room temperature
¼ cup granulated sugar
2 teaspoons Vanilla Extract
8 ounces COOL WHIP Whipped Topping
For the Fruit and Toppings:
3 to 4 RIPE bananas, sliced
1 (20-ounce) can crushed pineapple, drained well
16 ounces FRESH strawberries, hulled, and sliced
8 ounces COOL WHIP Whipped Topping
½ cup Pecans or Walnuts, chopped
Chocolate syrup - or Caramel syrup -or BOTH!
Maraschino cherries (drained well)

Directions:

1. Grease a 9x13-inch baking dish; set aside.
2. In a medium bowl, combine the cookie/ or graham cracker crumbs and melted butter, stirring until all of the crumbs are evenly moistened. Dump the crumbs into the prepared pan and press into an even layer. Refrigerate while you prepare the next layer.
3. In a medium bowl, mix together the cream cheese and sugar on medium speed until light and fluffy, about 3 minutes. Using a rubber spatula, fold in the COOL WHIP until thoroughly combined. Spread the cream cheese mixture on top of the graham cracker crust.
4. Arrange the banana slices in a single layer on top of the cream cheese filling, top with an even layer of the crushed pineapple, and then an even layer of the sliced strawberries.
5. Cover with the COOL WHIP, smoothing the top. Sprinkle with the chopped walnuts, then drizzle with chocolate and/or caramel syrup and top with maraschino cherries. Refrigerate for at least 4 hours, or overnight.

May Sketch Challenge for Scrap-a-Doodle Doo

Hi Everyone -HAPPY NATIONAL SCRAPBOOK DAY!!

Today, I want to share a layout I made for the BEAUTIFUL Sketch Challenge over on the Scrap-a-Doodle Doo Blog.

As one of the Design Team Members, and Educators at my FAVORITE Local Scrapbook Store - I created the layout below for your "inspiration!"

99% of the products used were purchased from "THE DOO" - so check out their on line website to see all the latest products and HOT New Arrivals - or if you are in the Ramsey, NJ area - stop on by at the store - you will LOVE it!

First -here is the AMAZING sketch - created by my fellow DT member ADINA  ( head over to the DOO blog to see her gorgeous layout too!)






I used the sketch to record the memory of one of the special "Date Nights" we have with our very good friends! They are always lots of FUN!

 
GOLD is a HOT NEW TREND in the scrappy world, and I had loads of FUN using the beautiful papers from the My Mind's Eye Lost and Found collection and accessories, a Zva rhinestone swirl, as well as Ranger's Distress Stain in Faded Jeans.  I used a Lucky 8 Border Punch to create the yellow diecut in the background.  ( the big yellow charm in the upper left is actually an old earring that I strung with some antique gold charms!)
